As can be seen, there is a significant divide between northern (butter) and southern (olive oil) Europe:

• The regions of Europe where butter consumption is highest are shown in yellow.
• In dark green, the regions of Europe where olive oil consumption predominates.
• In light green, the regions where olive oil and butter are commonly used.

As the author clarifies in the map legend, the consumption of other vegetable oils, which may be more popular in some regions than the products shown, has not been taken into account.
